Weitere Informationen und Tasting Notes

Highland Park FIRE

SMWS

  • 10.107 Summer-time at the beach, 10yo, 168 Fl., 61,2%, 62,80 GBP – Bunnahabhain
The nose encompasses attractive, fresh, floral and herbal notes, perfumed sweets, blossom honey and fruitful indulgences (peach, pear, pineapple, tinned mandarins). The palate has a sweet core of chocolate-coated nuts and raisins, toffee, jammy croissants and breakfast cereals, but we also found tannic leather, horse harnesses, Himalayan rock salt and spices. With water, the nose combines sea-spray with vanilla ice-cream cones – summer-time at the beach perhaps? The reduced palate was easier and juicier, but still a bit of an enigmatic mêlée – dried papaya, cherry chocolate and salted caramel, with pleasant mouth-nipping spice and light smoke, oak and tobacco on the finish.
Refill barrel, Jahrgang: 2006 | Region: Islay
  • 36.126 Manly, masculine and medicinal, 10yo, 216 Fl., 60,4%, 49,50 GBP – Benrinnes
The nose had foamy shrimps, nougat, honey and strawberry chews, but also an aromatic array of manly, masculine notes – woollen sweaters with leather elbow-patches, Victory Vs, Oddfellows, ginger, cinnamon and snuff. The neat palate was a definite ‘Wow!’ – ginger biscuits, muscovado on roasted peaches, brandy snaps, Peshwari naan and something medicinal (tincture of clove, Euthymol). Water brought cricket bats and upholstery shops to the nose; plus cut grass, linen, bourbon biscuits, black pepper and polished shoes. The reduced palate was tastier and juicer – black bun, Liquorice Allsorts, coffee dregs, orange peel and sugar-coated fennel seeds – this was a real winter warmer.
1st fill barrel, Jahrgang: 2006 | Region: Speyside Spey
  • 73.81 Dark chocolate destiny, 14yo, 606 Flaschen, 59.8%, 55,50 GBP – Aultmore
Full and warming, the aromas comforted us like a shortcrust pastry shawl and slippers made of spun sugar. Crushed black pepper came and went leaving behind luscious dark chocolate mousse with honeycomb crunch and chocolate sauce drizzled over fresh raspberries. The rich and fruity trend developed as we encountered cherry liqueur, madeira, tangerine segments soaked in Grand Marnier, strawberry schnapps and plums steeped in dark navy rum. Water released a plethora of orange-based delights with chocolate orange, blood orange and dried orange peel whilst complex nuances of celery, melon, eucalyptus, walnut and leather provided the perfect end.
Refill bourbon butt, Jahrgang: 2002 | Region: Speyside – Deveron
  • 93.71 Nautical but nice, 9yo, 228 Flaschen, 59%, 57,70 GBP – Glen Scotia
The ship was ready to set sail with its caramel wafer decking freshly varnished with vanilla honey and masts made from candy canes with rice paper sails tethered with liquorice rope. Setting out onto the ocean of dandelion and burdock we passed chalk cliffs dusted with icing sugar beside lemon bonbon rocks. The minty fresh maritime air brought memories of cockles and muscles whilst from the galley below came the tummy rumbling aromas of potatoes and sweet parsnips roasting with rosemary, honey and thyme, smoked sticky toffee pudding and pancakes with fresh lemon juice.
Refill barrel, Jahrgang: 2006 | Region: Campbeltown
  • G1.15 Could pacify a mob, 25yo, 486 Flaschen, 63,9%, 85,00 GBP – North British
The nose exuded sweetness (toffee, muscovado, apple crumble), marmalade on toast and wood shavings; also hot cross buns, dried flowers and bacon fries. The palate was unctuously sweet (butterscotch, candy corn, crème caramel) with honey-glazed pork chops and whispers of wood spice (cinnamon toast, fennel seeds, turmeric). The reduced nose found slightly over-done pecan pie, spiced rum, quince jelly and antique libraries. The viscous, mouth-filling palate had maple syrup, bacon and pancakes; burnt toffee, ginger, liquorice, wooden tea chests and enough candy to satisfy a trick-or-treat mob. After 24 years in an oloroso butt we transferred this to virgin oak.
Virgin oak butt, heavy toast medium char, Jahrgang: 1991 | Region: Lowland
