Cave Aquila Spirits ist ein sehr kleiner belgischer unabhängiger Abfüller. Welche Abfüllungen gibt es von Cave Aquila Spirits? Wie viele Fässer besitzt die Firma und wie kommt sie an diese? Mal sehen, was Daniel Quanten verraten hat…

Zusammenfassung

Cave Aquila Spirits ist ein belgisches Ein-Mann-Unternehmen hinter dem Daniel Quanten steckt. Bereits seit 2010 gibt es das Unternehmen, aber in Deutschland ist es (noch) nicht so bekannt. Und „so klein“ ist Daniel gar nicht ;-)

Daniel, wie bist Du zum Whisky gekommen?

Daniel: „I started getting an interest at whisky in the early 90’s. When I came back from a boat trip from England I bought a bottle of Bowmore. The peaty taste was new to me. Since there was no google to answer questions I had go to Scotland to find the answer what ‘peat’ really was. You can buy as many bottles as you like, or as you can effort ;-), but having your OWN bottling is a bit like an own child thats is born. You can be a school teacher for 100 of students, but YOUR own child is always something special. In your own bottling, you can put your soul and your heart in. For me, it’s the absolute top you can reach in whisky world. Aside from distilling your own whisky of course.“

Wo kommt der Name her und was bedeutet er?

Daniel: „Cave Aquila comes from ‚beware of the eagle‚. Roman Legions always had an standard bearer in front of the troops. On that Standard was an Roman Eagle.“

Daher kommt auch der Adlerkopf als Logo.

Daniel, Du bist auch für ein neues Whisky-Festival in Belgien aktiv?

Daniel: „Yes, that’s true. Since last year I co-organise a whisky festival in Beringen (Belgium). This year in September 29th will be the second edition. It’s a small coosy festival. Not with the great importers, but with a lot of small independent bottlers.  Also a a few longtime collectors that open a lot of there oldtimers for the festival. With an entrance price of 15 euro we try to open the whisky doors also to a new public, to discover the beautiful world of this Nectar.“

Marken und Ranges

Jeder UA hat eine oder mehrere Marken unter denen er seine Abfüllungen auf den Markt bringt.  Grundsätzlich wird Single Malt Whisky und Single Grain Whisky aus Schottland sowie Brandy und Cognac aus Frankreich abgefüllt.

• Eagle Collection, 2010-2016
  Von 2010 bis 2016 alles unter dem Namen „Eagle Collection“ abgefüllt. Hauptsächlich mit 43%.
• Knight’s Dram Collection, seit 2017
  Single Casks, Unchill-filtered, Cask Strength und not coloured (SC, CS, ncf, nca)
• Cognac
  Alte Cognacs (> 20 Jahre) werden einer zweiten Reifung in einem sehr kleinen (10l) Fass, das speziell ausgebrannt wurde, unterzogen. Auf die Frage nach dem „warum“, antwortet mir Daniel: „Not that I think they do it wrong in France, absolute not. But I want to make a different style of Cognac. I want to get the character and complexity of a spirit like whisky in these Cognac’s.„

Aktuell (05/2018) gibt es noch die #7 (129.- EUR) und #8 (229.- EUR) aus der Knight’s Dram Collection.

Preise und Rahmenbedingungen der Abfüllungen

Fässer und Wood-Policy

Eigene Lagerhäuser besitzt Daniel nicht, denn er kauft sich bei Brokern die Fässer, die ihm gefallen. Damit nimmt er auch keinen Einfluss auf die Wood-Policy, sondern muss sich auf die Fässer beschränken, die ihm angeboten werden.

Auswahl und Tasting Panel

Viele UAs haben einen ausgewählten Personenkreis, der eine „ausgebildete Nase“ hat. In einem solchen Tasting Panel werden dann nach hauseigenen Spielregeln Whiskys ausgewählt und/oder beschrieben.

Bei Daniel ist das relativ einfach, denn er selektiert nur das, was ihm selber gefällt. Dann gibt es zwei bis drei Personen, denen er eine gute Nase attestiert und mit denen wählt er dann das Fass aus.

Bei der Auswahl hat Daniel aber eine eigene Regel: „Important is that I have to like the spirit so much, that I would be happy to drink nothing else for the rest of my live if no one would buy a bottle from me, and I would be stacked with all the bottles.“

Besonderheiten

Hier ist nun der Platz, an dem sich der UA selber ins beste Licht rücken darf.

Daniel, was macht Cave Aquila Spirits so besonders? 

Daniel: „In whisky, I would stick to Scottish whiskies. Not that they are the best, but because I have the closest bond to Scotland. And I strongly believe in only bottling whisky not only with your mind, but especially with your heart. I’m surely one of the smallest of all companies bringing out whiskies. That also means there is no pressure to release a bottling at a certain interval.  I have the luxury to wait until THE right spirit passes my nose.“

Empfehlung von Cave Aquila Spirits

Auf die Frage, welche Flasche aus dem aktuellen Sortiment besonders zu empfehlen ist, antwortete mir Daniel: „You should really try the newest one in the Knight’s dram collection. It is an Invergordon 1972 of 44 years of age. Single grain whiskies are often qualified as inferior. But sometimes, certainly at a certain age, they can be superior to single malts. A single malt has already a certain package of complexity and flavours as a new spirit, in opposite to a grain. But this just gives the grain an advantage to get more influence from the cask over the years. If it is filled into the right barrel, after a few decades, the grain whisky is saturated with these lovely wood sugars and caramels.“

Mein Fazit

Ich habe schon unterschiedliche Proben von Cave Aquila Spirits probieren dürfen. Ich kenne Daniel persönlich seit vielen Jahren und freue mich immer wieder ihn in Schottland zu treffen. Vertrieben werden die Flaschen ausschließlich über die Facebook-Seite oder auf Festivals/Messen, auf denen Daniel ausstellt.
