Glasgow Distillery News: die ersten Fässer sind gefüllt
Die Glasgow Distillery hat erst eine Brennblase, denn die zweite tritt gerade ihre Reise von Deutschland nach Glasgow an und wird dort am Montag erwartet. Mit der Wash Still wurde aber Anfang März 2015 bereits der erste Whisky destilliert und am 04. März das erste Fass gefüllt.
Auf der Hansespirit habe ich Liam Hughes, CEO der The Glasgow Distillery Company Limited und seinen Head Distiller Jack Mayo kennengelernt. Liam hat mir erzählt, dass die ursprüngliche Glasgow Distillery für einen rauchigen, irischen Stil bekannt war. Seit über 100 Jahren wurde in Glasgow kein Single Malt mehr gebrannt. Weiter meint Liam: „Our whisky will reflect the modern vibrant city that Glasgow has become with one underlying statement ‚quality‚. So we intend to use our beautiful stills (supplied by Carl in Germany) to make a range of fabulous Whiskies.“

Kapazität
Wenn mit dem aktuellen Setup 24/7 gearbeitet werden würde, könnten 192.000 LPA erzeugt werden. Für den Anfang sind 70.000 LPA geplant.
Ausstattung
- Mash Tun: 4.000 Liter
- Wash Still „Tara“: 2.000 Liter
- Spirit Still „Vari“: 1.300 Liter
- Washbacks: 4x stainless steel mit je 5.900 Litern; Füllmenge 4.000 Liter. In diesen Washbacks kann die Fermentationstemperatur beeinflusst und kontrolliert werden.
Liam ergänzt noch: „Tara’s sister still is Vari which is spelt Mhairi in Gaelic but we liked the synergy of the 4 letters. The original distillery was also famous for its Irish style Whisky so Tara (as well as being my daughters name) is a nod to the Irish connection while Vari is very much a Scottish name.“
Fässer
Es werden verschiedene Fässer zum Einsatz kommen: 1st fill and 2nd fill ex-bourbon, ex-sherry, ex-port, ex-sauternes am Anfang, aber auch virgin oak casks und andere für spezielle Abfüllungen.
Liam: „The first cask was filled on the 4th March – it’s taking a bit longer with just the one still but it’s also allowed us to get used to the equipment so we are very happy with how it’s going – the new make spirit is really very good. To date we have filled Bourbon, Sauterne & Port casks with Sherry casks next on the list. We will be filling some 50 litre & 100 litre casks in the next few weeks and will try and source some other interesting casks where possible.“
